Two Ingredient Soda Pop Cake
If you are looking for a cake that will have all your friends and family thinking you spent hours in the kitchen preparing it then you need to try a “soda pop cake”. It is super simple to make, all you need is a box cake mix and a 12-ounce can of soda. If you are pressed for time, this is definitely the recipe for you. This cake is incredibly fluffy and moist and tastes delicious, too.
Not only does this soda pop cake remove all the precise measuring from the baking but it also cuts the fat from the cake and if you choose a low-calorie or diet soda, the calories, too.
First, prepare your baking pan, the size is your preference which can even be cupcakes, if you chose. Next, in a large bowl mix the dry cake mix and the carbonated beverage (the cake mix and soda NOTHING else). The soda replaces the other ingredients normally required such as eggs, water, and oil. Mix with an electric mixer, one minute on high then 2 minutes on medium, scraping the sides of the bowl as you mix. Once the batter is mixed well pour it into the prepared baking pan and follow the baking time instructions on the cake mix box for the size of pan you have chosen.
Make sure to test that the center of the cake is fully cooked otherwise the cake will collapse. Let it cool at room temperature before serving. Due to the consistency of the cake, it is pretty crumbly, so it is best not to try to invert it for cooling, plan on serving it right from the baking pan. You will also want to serve smaller pieces, so it does not fall apart.
To keep it simple you can top it off with your favorite canned frosting, or simply dust it with powdered sugar or a dollop of Cool Whip.
